Looking for a wonderful entree that will appeal to both youngsters and more sophisticated palettes, then look no further than these easy-to-make, budget-friendly little morsels of tastiness. These can be spiced up or down according to the consumer and virtually any ground meat can be used, again, depending on individual tastes. This is a family favorite around the Plan-it Vicki household and will likely become part of your regular dinner rotation.
Ingredients
1 1/3 pounds ground turkey
1 1/4 pounds spicy Italian turkey sausage
1/3 cup Italian breadcrumbs
1/3 cup finely grated Parmesan cheese
1 egg
2 tablespoons chopped parsley
3 tablespoons chopped basil
8 oz mini fresh mozzarella balls (or fresh mozzarella cut in cubes)
32 oz jar Rao’s Marinara Sauce (or favorite bottle tomato sauce)
extra grated Parmesan
Preheat oven to 350℉
Remove sausage meat from casings (either by splitting sausage down the middle with a sharp knife or squeezing the meat out) into a medium bowl.
Add ground turkey, breadcrumbs, parmesan, egg, parsley, and basil to bowl with sausage and mix until well combined.
Scoop up about 3 tablespoons of meat mixture into your hand and shape into a “pancake”. Place about five mini balls of mozzarella in the center of the “pancake” and roll into a ball making sure the cheese is completely hidden. Makes about 15 large meatballs.
Continue until the meat is all gone.
Place meatballs on baking sheet lined with tinfoil and bake for about 20 to 30 minutes until meat is cooked all the way through.
Heat up sauce in a large pot until bubbling. Reduce heat to simmer. Add meatballs and cook for around 10 minutes stirring occasionally to make sure the meatballs are completely covered in sauce.
Serve over pasta of choice. Sprinkle with Parmesan cheese.
Mozzarella Stuffed Meatballs
