Mango Salsa

This salsa reminds me of summer. I make it all the time. It’s perfect with grilled chicken or salmon
or you can just eat it with some great chips. You can switch out the mangos for pineapple for
another yummy sweet taste of summer.

2 fresh mangos
1/2 jalapeño pepper, seeds removed and diced
1 lime
1/4 cup chopped cilantro
1/2 cup diced red pepper
1/4 cup chopped red onion
1/2 teaspoon ground cumin
1 tablespoon honey
salt and pepper to taste

Cut 2 mangos in small cubes and place in medium bowl.
Add to mangos zest and juice of one lime.
Add jalapeño, cilantro, red pepper, onion, cumin and honey. Mix until well combined.
Add salt and pepper.
Refrigerate at least 2 hours. For better results leave overnight.
