1 cup plus 2 tablespoons unsalted butter, softened
1½ cups sugar
2 large eggs
1 teaspoon vanilla
3 cups all-purpose flour
¾ teaspoon baking soda
¼ salt
2 cups m&m’s
Instructions
Preheat oven to 350 degrees. Line a 13 x 9 inch baking pan with aluminum foil, allowing it to over hang the 2 narrow ends of the pan by at least 2 inches. Grease the foil or coat with cooking spray.
Using an electric mixer, beat butter until smooth. Beat in eggs and vanilla. Sift and then mix to just combined flour, baking soda and salt. Stir in m&m’s and turn out batter into the pan, spreading to edges. Bake on middle oven rack for about 25 to 30 minutes, until top is firm when lightly tapped and a toothpick inserted in the center comes out slightly wet. Remove from oven and let cool completely. Using the overhanging foil as handles, lift the bar to a cutting board. Carefully peel off foil. Cut into bars.
